Attention, il est pr\u00e9f\u00e9rable que les blancs soient \u00e0 temp\u00e9rature ambiante !<\/p>\n<p>Peser les blancs et ajuster les autres ingr\u00e9dients en proportion.<\/p>\n<p>Monter les blancs en neige (ferme, mais pas trop). A la fin, rajouter le sucre en poudre et continuer \u00e0 fouetter pendant 30 secondes.<\/p>\n<p>Tamiser ensemble la poudre d&#8217;amandes, le sucre glace et le cacao; bien m\u00e9langer.<\/p>\n<p>Ajouter progressivement au blanc le m\u00e9lange poudre d&#8217;amandes\/sucre glace\/cacao au blanc, en m\u00e9langeant d\u00e9licatement avec une spatule jusqu\u2019\u00e0 obtenir une p\u00e2te homog\u00e8ne, lisse et brillante.<\/p>\n<p>D\u00e9poser des petits tas (rond) de p\u00e2te sur une feuille de papier sulfuris\u00e9 pos\u00e9e sur une plaque, soit en utilisant une poche \u00e0 douille, soit avec 2 petites cuill\u00e8res.<\/p>\n<p>Essayer de faire des tas de la m\u00eame taille ! Les macarons vont l\u00e9g\u00e8rement s\u2019\u00e9taler donc il faut les d\u00e9poser en quinconce et un peu \u00e9loign\u00e9s les uns des autres. Compter environ 1 plaque par blanc d\u2019\u0153uf.<\/p>\n<p>Laisser reposer pendant 2 h environ.<\/p>\n<p>Pr\u00e9chauffer le four \u00e0 160\u00b0C (thermostat 5-6).<\/p>\n<p>L\u2019id\u00e9al est de mettre les plaques de macarons \u00e0 cuire sur 2 plaques vides et d\u00e9j\u00e0 chaudes (pendant le pr\u00e9chauffage du four), cela aide \u00e0 &#8220;saisir&#8221; les macarons.<\/p>\n<p>Pendant ce temps, pr\u00e9parer la garniture qui doit refroidir avant d&#8217;\u00eatre utilis\u00e9e&#8230;<\/p>\n<p>Chaque plaque doit cuire entre 10 et 15 min suivant les fours. Le mieux est de v\u00e9rifier la cuisson apr\u00e8s 10 min : il faut que la cro\u00fbte soit ferme mais le macaron doit \u00eatre encore moelleux dedans.<\/p>\n<p>Pour faciliter le d\u00e9tachage des macarons, 2 possibilit\u00e9s :<br \/>1) Faire passer un peu d\u2019eau froide entre la plaque et la feuille de papier sulfuris\u00e9 (en inclinant la plaque au dessus de l\u2019\u00e9vier), en faisant attention de ne pas mouiller les macarons !<br \/>ou<br \/>2) D\u00e9poser la plaque sur une surface froide (par exemple le carrelage), en faisant attention de ne pas marcher dessus !<\/p>\n<p>Pour la ganache : faire bouillir la cr\u00e8me avec le jus d\u2019orange.<\/p>\n<p>Hors du feu, ajouter le chocolat r\u00e2p\u00e9 ou coup\u00e9 en petits morceaux et bien m\u00e9langer jusqu\u2019\u00e0 dissolution compl\u00e8te du chocolat.<\/p>\n<p>Ajouter le zeste de l\u2019orange, la cannelle (entre 1\/2 et 1 cuill\u00e8re \u00e0 caf\u00e9) et un tout petit peu de muscade.<\/p>\n<p>Bien m\u00e9langer, transvaser dans un r\u00e9cipient froid et laisser ti\u00e9dir avant de mettre au frigo (pas trop longtemps, il ne faut pas qu&#8217;elle durcisse trop).<\/p>\n<p>Pour le montage des macarons : m\u00e9langer un peu la ganache pour l&#8217;assouplir.<\/p>\n<p>Avec une petite cuill\u00e8re, d\u00e9poser un peu de ganache sur l\u2019un des deux demi-macarons<\/p>\n<p>Assembler les biscuits par 2, de m\u00eame taille et forme.<\/p>\n<p>Assembler le macaron, en faisant tourner les biscuits l\u2019un sur l\u2019autre pour bien les coller et
