Soit 200 boulangeries dans le monde, situ\u00e9es dans 27 pays.<\/p>\n<p>Fils de boulanger, petit-fils de boulanger, il n\u2019a pas eu \u00e0 chercher bien loin dans sa famille pour trouver d\u00e8s l\u2019\u00e2ge de cinq ans sa vocation. Il aurait pu reprendre l\u2019affaire familiale dans l\u2019Est de la France, mais d\u2019une part, ses parents l\u2019avait vendue alors qu\u2019il \u00e9tait encore enfant, d\u2019autre part, <strong>\u00c9ric Kayser<\/strong> r\u00eavait plus grand et comptait bien allier \u00e0 sa passion du pain son autre passion, celle des voyages.<\/p>\n<p>\u00a0<\/p>\n<figure id=\"attachment_3251\" aria-describedby=\"caption-attachment-3251\" style=\"width: 300px\" class=\"wp-caption aligncenter\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-3251\" src=\"https:\/\/i0.wp.com\/profesordefrancesenmadrid.com\/wp-content\/uploads\/2020\/06\/pain-1.jpg?resize=300%2C140&#038;ssl=1\" alt=\"\" width=\"300\" height=\"140\" srcset=\"https:\/\/i0.wp.com\/profesordefrancesenmadrid.com\/wp-content\/uploads\/2020\/06\/pain-1.jpg?resize=300%2C140&amp;ssl=1 300w, https:\/\/i0.wp.com\/profesordefrancesenmadrid.com\/wp-content\/uploads\/2020\/06\/pain-1.jpg?w=640&amp;ssl=1 640w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><figcaption id=\"caption-attachment-3251\" class=\"wp-caption-text\">Le fameux pain au levain<\/figcaption><\/figure>\n<p><strong>L\u2019inventeur du &#8220;fermentolevain&#8221;<\/strong><\/p>\n<p>En 1994, il est formateur \u00e0 l\u2019Institut national de la Boulangerie : &#8220;Nous donnions des cours sur le levain et les \u00e9l\u00e8ves ne comprenaient pas. Nous avons eu alors l\u2019id\u00e9e avec un ami de mettre au point une machine pour g\u00e9rer le levain en permanence.&#8221;<\/p>\n<p>Il faut se souvenir qu\u2019autrefois les boulangers dormaient avec leur levain. Ils le pla\u00e7aient sous leur sommier. D\u00e8s que le levain gonflait, ils poussaient le sommier et allaient s\u2019occuper de ce levain. Donc on a invent\u00e9 une machine, &#8220;fermentolevain&#8221;, qui permettait au boulanger de ne plus dormir avec son levain, mais avec sa femme\u2026<\/p>\n<p>\u00a0<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-3259 aligncenter\" src=\"https:\/\/i0.wp.com\/profesordefrancesenmadrid.com\/wp-content\/uploads\/2020\/06\/croisant.jpg?resize=300%2C166&#038;ssl=1\" alt=\"\" width=\"300\" height=\"166\" srcset=\"https:\/\/i0.wp.com\/profesordefrancesenmadrid.com\/wp-content\/uploads\/2020\/06\/croisant.jpg?resize=300%2C166&amp;ssl=1 300w, https:\/\/i0.wp.com\/profesordefrancesenmadrid.com\/wp-content\/uploads\/2020\/06\/croisant.jpg?resize=540%2C300&amp;ssl=1 540w, https:\/\/i0.wp.com\/profesordefrancesenmadrid.com\/wp-content\/uploads\/2020\/06\/croisant.jpg?w=640&amp;ssl=1 640w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>\u00a0<\/p>\n<p>Cela a chang\u00e9 beaucoup de choses dans la boulangerie, cela a permis l\u2019av\u00e8nement du pain de tradition fran\u00e7aise, de revenir \u00e0 la fabrication de baguette \u00e0 l\u2019ancienne sans additif : du pain avec de la cro\u00fbte, du caract\u00e8re, et du go\u00fbt ; il faut savoir que dans chaque pain, il y a environ 200 ar\u00f4mes diff\u00e9rents.<\/p>\n<p>\u00a0<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-3261 aligncenter\" src=\"https:\/\/i0.wp.com\/profesordefrancesenmadrid.com\/wp-content\/uploads\/2020\/06\/tarte.jpg?resize=300%2C95&#038;ssl=1\" alt=\"\" width=\"300\" height=\"95\" srcset=\"https:\/\/i0.wp.com\/profesordefrancesenmadrid.com\/wp-content\/uploads\/2020\/06\/tarte.jpg?resize=300%2C95&amp;ssl=1 300w, https:\/\/i0.wp.com\/profesordefrancesenmadrid.com\/wp-content\/uploads\/2020\/06\/tarte.jpg?w=583&amp;ssl=1 583w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>\u00a0<\/p>\n<p><strong>\u00c0 la conqu\u00eate du monde<\/strong><\/p>\n<p>C\u2019est en 1996 qu\u2019<strong>\u00c9ric Kayser<\/strong> ouvre sa premi\u00e8re boulangerie. &#8220;Il \u00e9tait essentiel pour moi de l\u2019ouvrir \u00e0 Paris&#8221;, explique-t-il, &#8220;parce que c\u2019est la capitale de la mode et de la gastronomie&#8221;. Essentiel aussi parce que d\u00e8s le d\u00e9part <strong>\u00c9ric Kayser<\/strong> a dans l\u2019id\u00e9e de se d\u00e9velopper \u00e0 l\u2019\u00e9tranger. &#8220;Faire d\u00e9couvrir le pain,
